| DISCUSSION | – From a strictly statistical standpoint, these xBmt results suggest Irish moss does not significantly impact beer. From a purely observational standpoint, as you can clearly see in the photos above, the Irish moss beer did eventually develop better clarity than the non-fined beer.
The fact the very characteristic Irish moss is purported to affect, appearance, is the only one the majority of tasters agreed was exactly the same as the non-fined batch fascinates me, but not because I believe each person’s observations were accurate. I don’t. I’m actually of the opinion participants simply didn’t pay that much attention to appearance, both beers looked “similar enough,” and hence this xBmt was the final push for me to make a change in the way I approach data collection.
From now on, participants will be served each sample in opaque cups, an idea I toy’d with before and recently learned is the way it’s done on a professional level. Nearly every brewer I know uses either Irish moss or Whirlfloc on the belief it will increase the clarity of their beer.
- At this juncture, I’m fully comfortable saying it may not be necessary, though it would appear to have some impact.
- I mean, how many times have you forgotten to toss Irish moss into the boil only to end up with perfectly clear beer a few weeks later? I absolutely plan to repeat this xBmt using gelatin to fine post-fermentation and, should the results be as I expect, I’ll likely ditch the practice of using Irish moss altogether.
In fact Once the data was collected for this xBmt, I thought it’d be fun to play around with gelatin a little bit. This was admittedly uncontrolled, observation-only, fully biased, and totally anecdotal. I transferred the 2 or so gallons from the non-fined keg to the Irish moss keg, which had a similar volume remaining, added the gelatin solution, and pulled a sample just a couple days later. The beer tasted as I remember it– slightly toasty, slightly roasty with a noticeable caramel malt note that didn’t overwhelm the Centennial hops. I won’t be brewing this beer again, not that it was terrible, I just didn’t like it all that much. Had I fermented it with a different yeast, something like WLP090, it’s possible I would have formed a different opinion.

We’ll focus on kettle finings for now and discuss fermentor finings next week. Kettle finings are almost always made from Chondrus crispus, more commonly called Irish moss, a red seaweed that contains a great deal of carrageenan. Carrageenan, in turn is a type of polysaccharide (carbohydrate) that is widely used in the food industry as a thickener.
Many vegan products make use of the carrageenan in Irish moss as a non-animal alternative to gelatin. Even affirmatively non-vegan products such as yogurt and ice cream often include carrageenan as an inexpensive thickener. So what does this have to do with clear beer? Well, as it happens, carrageenan carries a fairly strong negative charge and is all too eager to bond with positively charged proteins floating around in wort.
When carrageenan is introduced into boiling wort, it matches up with said positive proteins and, upon cooling, forms large clumps that precipitate out of suspension and fall to the bottom of the kettle. Brewers who rely on immersion wort chillers will recognize this phenomenon immediately as the cold break, that “miso soup” phase when cloudy clumps separate out and leave behind a crystal clear liquid.

Simply hydrate one teaspoon per five gallons of wort in a small amount of water for a few minutes, and then add it to the kettle within the last 10 to 15 minutes of the boil. That’s it. If you cool your wort quickly enough, the cold break will be obvious and substantial.
Whirlfloc tablets (top, left), another type of kettle fining, are made from Irish moss and bear a mild physical resemblance to chewable antacids. Many brewers prefer these tablets to the plain algae because they’re pre-measured, and no hydration is necessary. It has also been my personal (though by no means universal) experience that Whirlfloc creates a better cold break than Irish moss in its unprocessed form.
It’s also more expensive, so try both and decide which you prefer. Kettle finings do a great job of pulling proteins from wort, but what about finished beer? Next week we’ll take a look at some of the finings that brewers use to remove proteins and yeast before packaging their beer.

Irish moss is best rehydrated by just covering with water, the amount needed is around 1.25 – 4 grams per 25 litre batch. As you can see this is going to be quite difficult to measure even with micro scales. It is around a teaspoon full in most cases. Add the rehydrated Irish moss 10 minutes before the end of the boil. Protafloc is used at a lower dosage as it is more efficient. The dose is around 0.3 – 0.5 milligrams per litre or 0.75 grams for a 25 litre batch. Tablets are made in 2 gram sizes so just under half a tablet is fine. Add directly to the wort 10 – 15 minutes before the end of the boil Whirlfloc is pretty similar to Protafloc but used at 1 gram per 25 litre batch, half a tablet in the last 10 – 15 minutes is good.

But even if you’re in good company, it begs the question: Why do some people hate the taste of beer? The answer comes down to genetics, which influences how our brains process bitter-tasting and cold beverages.
- What’s more, it turns out that beer’s bitter taste triggers evolutionary wiring designed to keep us away from potentially dangerous food and drink, and this trigger is stronger in some people than it is in others.
- But first, let’s start with beer’s bitter taste.
- As you may remember from science class, there are five types of taste cells within our taste buds that help us perceive salty, sweet, sour, umami (savory) and bitter flavors.
Once the taste buds identify specific flavors, taste receptors send this data via nerves to the brain stem. “If you think of a receptor as a lock, then whatever it binds to is a specific key,” Dr. Virginia Utermohlen Lovelace, an associate professor emeritus of nutritional sciences at Cornell University in Ithaca, New York, told Live Science.
The cell to which that receptor is attached sends a message to the brain to say, ‘Oooh this is bitter!'” There are a whopping 25 different types of taste receptors for bitterness in the human body. According to a 2017 study published in the journal Scientific Reports (opens in new tab), TAS2R16 alone (which is one of the 25 bitter receptors in the human body) has 17 polymorphisms, including a variant that is associated with alcohol dependence.
Lovelace explained that one of the easiest indicators of bitter sensitivity is the number of taste buds you have in your mouth. The more taste buds you have, the more likely you are to detest hoppy beers. Bitter receptors, however, are not the only variants at play.
The carbonation in beer turns on our “cold” receptors (the same temperature receptors that make minty gum taste cold and cinnamon taste hot ). Cold receptors have genetic variations too, so while you may not be sensitive to the bitterness of beer, the receptors that signal coldness might also make beer seem unappealing, Lovelace said.
If you’re sensitive to the bitterness in beer or other alcohol, there are countermeasures to help “drown out” the strength of the bitter receptors, she noted. “Sweet and salty foods can help turn off the effects of the bitter receptors, which is why we have beer nuts and why we drink tequila with salt!” Lovelace said.
