The first concept to understand is that spicy is not a taste. The receptors in your mouth actually register spice — such as capsaicin in chiles — as an irritant. (The five recognized tastes are sweet, sour, bitter, salty and umami. And Garneau’s research shows evidence for adding fat as a taste, too.) To feel the irritant sensation from spice, try the experiment Garneau presented : Close your eyes, plug your nose and take a bite of a spicy food like a wasabi pea.

Think about what you’re experiencing and you can feel the irritation in your mouth. The spice irritant registers in your brain in two ways: as a pain sensation and as hot in terms of temperature. This is why we experience tingling sensations, mouth watering, sweating and flushed cheeks.

1. The spice binds to receptors on the tongue and travels through the trigeminal nerve to the brain.
2. And “the brain says danger,” Garneau explained at the seminar.
3. The natural reaction is to neutralize or counteract the spicy food.
4. This is why we drink beer, or other cold liquids.
5. But as we know, it offers only temporary relief.

The reason, Garneau says, is that capsaicin is hydrophobic, meaning it won’t dissolve in water. (Beer is on average 90 percent water.) Moreover, beer actually can make the spice effect worse. A super sour beer or one with huge bitterness, like an India pale ale, only intensifies the heat in your mouth because it also can be an irritant.

The same with high alcohol levels. And the carbonation in beer doesn’t help much, either, because the little bubbles explode on your tongue and can accentuate the spice. The best way to cool your mouth is with something hydrophobic, such as liquids or foods with fat that can pull capsaicin off the receptor.

This is why people often reach for whole milk. The only benefit beer can provide to neutralizing spice is providing sweetness. The sugar from malt is what the yeast eats to generate alcohol, but it doesn’t consume everything, leaving residual sugar in beer.

1. The styles with the most residual sugar are often darker and sweeter, such as English- and Belgian-style ales.
2. Garneau says the science is still unclear on why sugar counteracts spice, but studies suggest that the brain perceives sweetness as pleasure and it somehow decreases the perception of pain, at least a little bit.

If anything, the best beer to balance against spicy food is possibly a nitro milk stout, or nitrogenated malty beer, such as amber or brown ale, because they don’t amplify the irritation with bitterness or carbonation and provide sweetness. So why do so many craft beer drinkers enjoy IPAs with spicy food, despite the science of taste? Julia Herz at the Brewers Association put it like this at the seminar: “Because it just hurts so good.” As the craft beer program director at the Boulder-based trade group and author of a book on beer and food pairing, Herz said she loves to pair beer with spicy food purposely because it intensifies the spice.
